Can anyone explain how often Amazon buyers rate their orders? I've completed three orders but haven't received any ratings or reviews yet. Additionally, can anyone suggest how many ratings I might receive on average for my first 100 orders?

Unfortunately, only people that want to be negative leave reviews or ratings these days. You will be lucky if you get one in a 100.

The average is 2-3%. So for 100 orders you will get 3 ratings. If you get more, the AI will suspect rating/review manipulation and dig deeper.

1% is pretty normal for reviews, so you would need 100 orders to get 1 review.
Generally buyers do not seem to care about reviews like they would on eBay.

ratings system design is horrible, it takes sometimes YEARS to see any good ratings rise to the point where it is a benefit to your listing.
System SHOULD be automatic 5 star rating after 30 days, anything lower than a 4 rating requires a comment or it is not allowed. Easy fix, but, Amazon won't

to put things into perspective, we have 22k units ordered over last year and a half, with 72 reviews, people only like to point out and highlight the negative, nobody realizes the positive reviews are very helpful also, but they are few and far in between.

We get about 1 feedback for every 200 orders. We have been selling on Amazon since 2003. Back then it was about 1 feedback for every 20 orders.
The worst part part is that every angry, irate customer will DEFINITELY leave a negative. Most negative feedback will be for things completely out of your control. The post office puts the package in a neighbor's mailbox? Negative feedback. FedEx left the package in the rain? Negative feedback. The customer says Amazon didn't honor a coupon code? Negative feedback. We got a negative feedback because the customer said the shipment arrived too fast. Another customer left a negative feedback because we gave him a free gift. He said the free gift was a sign that we were scamming him in some way. People will give you negative feedback meant for other sellers.
Essentially every good thing you do is forgotten about and / or ignored by Amazon. Every little thing out of your control that goes wrong will be held against you.
Most negative feedback will be for things you have no control over. And Amazon will often not honor their own policies anymore. Product feedback was just left on my seller feedback in violation of Amazon's feedback policies. Amazon will not remove it. Amazon makes promises to their third party sellers and then refuses to simply follow their own policy. So you can no longer trust Amazon. They do not care about you.
Amazon leaves this feedback (extortion / smear system) system in place because Amazon likes their third party sellers to be terrified 24/7. Also, since Amazon competes against their third party sellers Amazon benefits from having the third party sellers look bad in comparison. Notice how Amazon themself does not have "seller feedback" the way we do? They wouldn't dare.
I wish you the best.. But be prepared. Amazon has purposely created a system that will surely do harm to your business reputation.

Now if you are a Chinese seller, you can easily cheat the system and get 200 reviews per month. Amazon will do nothing to your seller account. They get those quick reviews using black hat tactics and most are paid reviews with is against Amazon's TOS.
