Shipping Fees more than
I have seen many sellers charging higher shipping rates than the item costs to ship. For example, the shipping charge is $7.99 for an item that costs $6.00 to print the label. What happens to the $1.99? Does the seller get to keep it or Amazon will take it?

The seller "keeps" all the money charged to the buyer for shipping -- less Amazon's referral fee percent that is.
Sellers have some freedom with what they charge for shipping -- but far from total freedom.
Remember that what it costs you to ship is not limited to postage.

Yes, the seller gets the amount they charge less 15% for most categories. So, in your example, the seller would get $6.79. So, if the shipping was $6.00, that would leave the seller with $0.79 to cover the packaging supplies. Also keep in mind that shipping rates vary based on the destination. I make money on the shipping to some locations and lose on the shipping to farther away destinations since Amazon doesn't let you charge different amounts to different areas except for Hawaii & Alaska. I try to set it up so that it comes out about even after all is said and done. Amazon will disable offers if they feel you are gouging buyers on the shipping charges.
