I have a customer from Mexico that is buying an item that is fulfilled by Amazon but they are requesting that I can send them an invoice or CFDI.
How do I get that for the customer?

The best you can probably do is tell them they purchased the items from Amazon and they need to print out the order confirmation from Amazon.
If that doesn't work they will need to contact someone at Amazon directly and seek help there!
Good luck on this one! Just adding it to my list of why I don't sell internationally on here any longer.

Any buyer can print out an invoice from the order detail page -- there's a link right on the main order page next to every order "View Invoice" -- then they just print.

Happy to see that others have chimed in with suggestions here. They are correct, when a buyer goes to their order summary page, each order should have a link to View Invoice.
If the buyer does not have this option, I would recommend that they contact customer support.
