I’m new to selling on Amazon. I’ve recently been ungated to sell many brands such as Colgate, dove, Cerave and many more. For some odd reason they’re all listed as restricted products. How is that even possible? Can anyone explain to me what is goin on so I can get a better understanding?

You're not "ungated" you were giving tentative permission assuming you had all the necessary letters of authorization to specifically sell on amazon as well as invoices from a wholesale source, not receipts.
Doing Retail Arbitrage is no longer viable on amazon. Every name brand has locked their products to keep random people from selling them. There are multiple websites that will tell you all the many brands you can't sell. IF you make the mistake of listing one of these brands anyway its only a matter of time until the Ai catches you. When they do, amazon will confiscate all your money and products and you're one per lifetime amazon account will be permanently closed.

Amazon gives approval with the assumption that when asked, you will have the correct and valid documentation from the brands to be able to sell their products.

Welcome to selling on Amazon and to the Forums!
As your fellow sellers have suggested, you may have initial approval to sell under those brands, however there may be restrictions associated to them which would require additional approvals and documentation to be submitted in order to sell with those brands, also depending on the category. You'll find more information about this in the Products that require approval page.
