In order for me to continue selling on my account, Self-Attestation documents are being requested. However, since I am not a business owner and will be selling without a company, I cannot provide these documents.

When you signed up for your account, I see that you signed up as a business seller so this is why you're being asked for the Self-Attestation document and I do not have the power to make any edits on my end.
You can try to reach out to seller support to see if they are able to make a change on your account here: https://sellercentral.amazon.com/cu/contact-us
Once you have the case ID, share it here with me so that I can track it and escalate if needed.
